Fried Egg Salad Sandwich with green olives, dill and lemon

Using fried eggs instead of hard-boiled is a great way to switch up a classic egg salad sandwich. The yolk forms a sauce and the sandwich is warm. This sauce is a riff on a tartar sauce using the herbaceous briny flavor of green olives instead of pickles.

1 Tsp olive oil

3 Large Eggs

1 TB mayo of choice

1/3 Cup chopped green olives

1 TB fresh lemon juice

1 Tsp dill (fresh or dry)

4 slices of toasted bread of choice

½ Cup shredded romaine or lettuce of choice

In a small non-stick skillet over medium heat add the oil. Once hot crack in the three eggs. Cover the pan and cook until whites are firm and yolk is soft (or to desired doneness).

In a medium size bowl add the remaining ingredients and stir to combine. Taste and adjust accordingly to suit your taste. Slide the fried eggs into the mixture and break apart with a fork.

Divide between two pieces of toast or bread of choice. Top with shredded lettuce. Place the other piece of toast on top and enjoy!
