Jeffrey Saad's Simple Egg Quesadilla
Mexican food is always my favorite so adding an egg to it makes it even better! Check out this simple radish salsa to go with it. Great for breakfast, lunch or dinner! Have a delicious day!
Yield: 2 quesadillas
½ C chopped radish
juice of 1 lime
½ jalapeno (or chile of choice), chopped
¼ C cilantro, chopped
Pinch of salt
1 tsp canola oil
2 Lg Eggs
4 6” tortillas of choice
½ C Monterey Jack shredded
In a small bowl mix together the radish, limejuice, jalapeno, cilantro and salt. Stir and taste. Adjust the amount of lime, chile and salt to suit your taste. Set aside.
In a medium size non-stick pan over medium heat add the oil. Once hot crack the eggs into the pan, add a pinch of salt and fry to desired doneness. (Optional, add a pinch of cumin to the canola oil)
Place a griddle or large non-stick pan over medium high heat. Divide the cheese between two of the tortillas. Place the other tortillas on top and press down. Place the quesadillas on the griddle and cook approximately 2 minutes or until golden. Flip them over and cook for another minute or two until golden. Place on a cutting board and cut each into four pieces. Slide cut quesadilla onto a plate. Top each with a fired egg.
Divide the salsa evenly over the top of each egg. Enjoy!
Try dipping the quesadilla into the yolk!
