Tender chunks of steak, grilled sweet green onions and chewy, golden rice topped with a perfectly fried egg! It is so easy to work with America’s Egg Farmers because I am continuously amazed at how versatile and delicious the egg is. When you want to turn leftovers into a great new meal reach for that oval super-hero- the egg! The egg provides an instant sauce, beautiful presentation and of course flavor! Breakfast, lunch or dinner it is delicious.
Think about adding a fried egg to any of your leftovers or favorite dishes.
Steak, grilled green onion and rice cakes.
Per cake:
1 C leftover rice (this time I had a short grained, Chinese sweet rice)
1/3 C leftover grilled steak, cut into small pieces
3 Ea grilled green onions, chopped small
2 TB all-purpose flour
3 tsp olive oil
2 Lrg eggs
Pinch salt
Chopped cilantro for the garnish
In a small bowl mix together the rice, steak, and green onions. Pour onto a cutting board and form into a patty. The Chinese rice is sweet and sticky so it was extra easy to form into a patty.
In a small non-stick skillet over medium high heat add 2 tsp of the olive oil.
Dust the patty on both sides with the flour. Carefully add the patty to the pan. Cook for about 3 minutes until golden. Flip it over and cook another 2 minutes until golden and then slide onto a plate.
In the same pan with the heat turned down to medium add the other tsp of olive oil.
Crack the eggs into the pan. Add a pinch of salt evenly over the eggs. Fry to desired doneness and slide onto rice paddy. Garnish with cilantro and serve.
