I hope this finds you dreaming about your next meal as I always am. This is not only a super delicious French Toast that has crispy chewy edges, a thin golden crust and a custard like moist interior but it is perfect for feeding a large group because it is made in the oven.
Oven French Toast
8 1” thick slices of rustic/porous bread
5 Large eggs
1 Cup heavy cream
1 Teaspoon vanilla extract
1 ½ Ounces simple syrup (recipe below) or granulated sugar
Large pinch of salt
2 TB butter
Heat oven to 450 degrees. If you have convection use it and still leave at 450.
Line a baking sheet with parchment paper or non-stick spray.
Whisk eggs, cream, vanilla, simple syrup and salt in a wide bowl. Whisk for 30 seconds just long enough to create an even colored mixture.
Press one slice of bread at a time down into the mixture. Flip over and press down again. The goal is to have the egg mixture soak into the bread but you do not want the bread to be soggy. Let the excess batter drip off the bread and then lay onto the baking sheet. Once all eight pieces are done place the pan in the oven and bake for about 12 minutes (8 with convection) or until golden brown. Rub with butter and serve as you like (syrup, powdered sugar, fresh berries, etc). Enjoy!
