« backDouble Chocolate Ginger Cookie

I hope you are off to a great week and are enjoying the holiday season. I did this recipe for the Incredible Edible Egg Facebook Fans and thought you might enjoy it as well. When chocolate meets holiday spice your home will be full of joy! Happy Holidays!

Yield: 3 dozen 2” cookies

8 oz un-salted butter, cubed, room temperature

¾ C granulated sugar

¾ C light brown sugar

2 Lg eggs

1 Lg egg yolk

2 tsp vanilla extract

2 TB heavy cream

2 C all-purpose flour

¼ C un-sweetened cocoa powder (the best you are comfortable buying)

½ tsp salt

½ tsp baking soda

1 tsp ground ginger

1 ½ C semi-sweet chocolate chips

Heat oven to 325

In the mixing bowl of an electric mixer with the paddle attachment cream the butter and sugars together. (Medium high speed for about 3 minutes until the sugar and butter form a smooth paste).

In a separate bowl whisk together to combine the eggs, egg yolk, vanilla and cream. Add to the creamed butter/sugar while the mixer is running on low speed.

In a separate bowl mix together the flour, cocoa powder, salt, baking soda and ground ginger. Add to the mixer while running on low speed. Mix just to combine.

Add the chocolate chips and mix on low just to combine.

Use a tablespoon measure to scoop heaping tablespoons of the dough. Form into a smooth ball and place on a parchment paper lined cookie sheet. Press the ball down flat.

Place the cookie sheet in the oven on the middle racks. Bake for about 13 minutes until the cookies are set but still soft in the center. Remove from the oven and slide the cookies (by sliding the entire piece of parchment paper) onto the counter or a cooling rack (if you leave them on the cookie sheet they will overcook from the residual heat).

Try not to eat too many in one sitting! Enjoy.

Note: If you cook at 275 for about 18 minutes you will get a thinner, chewier cookie. If you cook at 375 for about 9 minutes you will get a thicker, cake-like cookie.
