“Egg It”!

Hello All, I hope this finds you off to a great week. I had an incredible meal at a restaurant in Miami the other night (Sugarcane raw bar grill) and I realized after eating these two dishes that what put them over the top was the addition of the egg.

In addition to thinking about eggs as my daily mind and body energy vitamin I am always reaching for the egg as a quick and easy way to make almost any dish delicious and unique. Think of a favorite dish you have and then “Egg It”. You may be surprised at how inexpensive and easy it is going to be to re-create all of your favorites with an egg. Here are some of my favorites:

Sloppy Joe

Burger (as I did in the blog last week with fried pickles)

Pasta dishes – Fry it and drop it right on top or after you simmer your noodles in the sauce crack a couple eggs on top and then cover the pan and cook on low until the eggs are set.

Chinese noodles of any kind – Even a cup of microwaved ramen noodles will become a gourmet over the top dish. Put the hot noodles and broth into a microwave bowl; crack an egg on top and microwave until set. Garnish with fresh chopped cilantro.

BLT..E – Bacon, Lettuce, Tomato and a Fried Egg.

Fried rice – Heat a little peanut oil in a pan, add some chopped veggies and garlic. Add some leftover rice, crack the egg on top and cover the pan. While the bottom gets crispy the egg will cook on top.

Tacos and Burritos – We all love a good breakfast burrito but you will be amazed how tasty a fried egg is on top of a savory taco or rolled into a savory burrito. The yolk pops and mixes with the salsa to become an incredible rich, creamy sauce!

Bruschetta – Grilled or broiled bread rubbed with garlic and your favorite toppings; add a poached or fried egg.
