« backEgg Tuesday – Moroccan fried egg!

Happy Holidays and Happy New Year! I hope this finds you in the middle of enjoying your family, friends and of course your eggs! My resolution this year? To keep doing what I have been doing and do it with all the same love and energy. One of those things is cooking and eating eggs. Check out the video.

Moroccan Fried Egg

3 large Eggs

2 teaspoons olive oil

1 clove garlic, chopped

¼ cup chopped black olives

½ cup tomato sauce

1 teaspoon harissa paste (you can use chile paste or chile powder as well)

2 tablespoons chopped fresh mint (you can use dried if you prefer)

¼ cup crumbled feta cheese (you can use goat cheese as well)

In a medium non-stick pan over medium heat add the olive oil.

Once hot add the eggs and a pinch of salt. Fry to desired doneness. Remove from the pan and set on a plate.

To the same hot pan add the garlic. Stir just until you smell the perfume of the garlic. Do not brown the garlic. Add the tomato sauce, olives, harissa and half the mint. As soon as it comes to a boil stir and pour over the eggs. Garnish with the cheese and the remainder of the mint. Add a slice of toast if you like.

*You could also crack a bunch of eggs into a lightly greased baking dish and then pour the boiling sauce over the eggs and bake at 350 until the eggs are set.

    Jeffrey, that is a great Christmas looking egg. One of my buds prides himself on his making of eggs for the family once a week. Though I’ve already pointed him here, I will do so again. Did you intentionally put the red and green together? The feta even adds a touch of snow to the mix.
    Thankfully, while we wait for your book, you continue to spoil us. I really mean that.

    I must confess…I wasn’t an egg person, but now with all these delicious egg recipes, how can you not be??It is truly refreshing to watch your videos, read your recipes and try them out. I didn’t know there were so many different ways to make eggs. Now I don’t get bored of them.

    I loved the Moroccan fried eggs. They are delicious!

    Moving into new house tomorrow (1/3/2011) This dish looks amazing. Will need to update my spices and Harrisa will be on the list. Will (hopefully) never move again. How stressful!!!!
