Perfect Scrambled Eggs

For light and fluffy eggs use 1 TB of water per egg.

Servings: 1-2

1 tsp Butter

3 Lg Eggs

3 TB Water

Pinch salt

Whisk the eggs, water and salt together until completely combined and frothy.

Melt the butter in a medium size non-stick pan over medium heat.

Once melted pour in the egg mixture. Allow to sit until it starts to set around the edges.

Using a rubber spatula “paint the bottom of the pan to create folds of egg. Never allow the egg to sit long enough to dry out. Keep it moving.

Once the egg is cooked but there is still a slight shine turn off the heat. Stir in cheese and/or anything you like. Transfer to plates and enjoy!
