Nacho Fried Egg

Happy Egg Tuesday, I hope you are having a delicious day. If not this recipe will change that. Some of the best creations happen randomly with what is laying around. This is one of those. It is an egg fried with finely chopped onion and chile powder and topped with crumbled corn tortilla chips and cheese. Enjoy!

Per person:

1 tsp butter

1 Lg Egg

Lg Pinch chile powder

1 TB finely chopped red onion (or onion of choice)

2 TB Monterey Jack, finely grated (or cheese of choice)

¼ C. crumbled corn tortilla chips

In a small non-stick pan (or a large pan if making for several people) over medium heat melt the butter. Crack in the egg/s. Top with the chile powder, onions and a pinch of salt.

When the white is set flip the egg over and cook for 15 seconds or to desired doneness. Flip back over and turn heat off. Top with cheese and chips and serve. Serve with hot sauce of choice if desired.
