Ice cream-The egg’s sweet victory!

I love ice cream! Who doesn’t right? The egg amazes us with it’s incredible array of savories but as we all know it is very comfortable in the world of sweets and ice cream is the egg’s star performance. Although the official first day of summer is June 20th it is never too early to start enjoying ice cream.

1 Qt chocolate ice cream

5 Lg Egg yolks

¾ C Sugar

2 C Heavy Cream

1 C Milk 2% or whole

1 Pinch Salt

1/3 C Unsweetened cocoa

3 Oz Bittersweet chocolate, chips or chopped

In a thick-bottomed saucepan add the egg yolks and sugar and whisk together just until smooth. Add the cream, milk, salt and whisk to incorporate. Place the pot over medium heat and cook stirring gently until the mixture reaches 170 degrees.

Gently pour the mixture through a fine strainer into a large bowl. Place the bowl in an ice bath to cool down. Transfer the mixture to the refrigerator (covered tightly) for an hour or overnight. Transfer to ice cream maker and freeze per instructions of machine. It is very important to eat some of the ice cream in its brilliant custard consistency right out of the machine J
